Description

This Crock Pot Lemonade Chicken recipe offers a delightful blend of tangy and sweet flavors, slow-cooked to perfection. Tender, juicy chicken breasts simmer in a zesty lemonade-based sauce, thickened to a luscious consistency and served best over steamed rice and fresh vegetables for a comforting meal.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Sauce

  • 6 ounces thawed lemonade concentrate (¾ cup)
  • 3 tablespoons brown sugar
  • 3 tablespoons ketchup
  • 1 tablespoon white vinegar or rice wine vinegar
  • 2 tablespoons water
  • 2 tablespoons flour

Serving

  • Lemon slices or wedges, for serving
  • Cooked white rice, for serving
  • Steamed vegetables (such as broccoli), for serving

Instructions

  1. Prepare Slow Cooker: Lightly grease the slow cooker insert with a small amount of cooking oil to prevent sticking and ensure easy cleanup.
  2. Add Chicken and Sauce: Place the boneless, skinless chicken breasts evenly in the bottom of the slow cooker. In a separate bowl, whisk together the thawed lemonade concentrate, brown sugar, ketchup, and vinegar until well combined. Pour this sauce evenly over the chicken breasts.
  3. Slow Cook: Cover the slow cooker with its lid and cook the chicken on LOW for 4 to 6 hours, or alternatively on HIGH for 2 to 3 hours, until the chicken is tender and fully cooked.
  4. Thicken Sauce: About 30 minutes before the chicken finishes cooking, prepare a slurry by whisking together the flour and water until smooth. Carefully remove the chicken from the slow cooker and set aside temporarily. Increase the slow cooker’s heat setting to HIGH and whisk in the flour slurry to the cooking liquid to thicken the sauce.
  5. Finish Cooking: Return the chicken breasts to the slow cooker, coating them with the thickened sauce, and cook for the remaining 30 minutes to allow the sauce to fully thicken and the chicken to absorb the flavors.
  6. Serve: Serve the slow-cooked lemonade chicken breasts over a bed of cooked white rice with a side of steamed vegetables like broccoli. Spoon extra sauce over the chicken and garnish with fresh lemon slices or wedges for added citrus brightness.

Notes

  • For extra flavor, add a pinch of garlic powder or onion powder to the sauce mixture before cooking.
  • You can substitute rice wine vinegar with apple cider vinegar for a slightly different tang.
  • Make sure to thaw lemonade concentrate completely to ensure smooth mixing of the sauce.
  • If you prefer a thicker sauce, you can add an additional tablespoon of flour slurry at the end of cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
