Main Chili:
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can chili beans, undrained
- 1 (15 oz) can diced tomatoes with green chilies
- 1 (8 oz) can tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- Salt and pepper to taste
Additional Ingredients:
- 3 cups Fritos corn chips, plus more for serving
- 1½ cups shredded cheddar cheese
- Sour cream, chopped green onions, and jalapeños for serving
Instructions
- Cook the Beef: In a skillet over medium heat, cook the ground beef and chopped onion until browned. Add garlic and cook for another minute.
- Combine Ingredients: Transfer beef mixture to the crock pot. Add beans, tomatoes, tomato sauce, spices. Cook on low for 4–6 hours or high for 2–3 hours.
- Add Fritos and Cheese: Before serving, stir in Fritos and cheddar cheese. Let melt. Serve hot with toppings.
