- 1/4 cup diced onion
- 2 tablespoons chipotle peppers in adobo, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1/2 cup shredded cheddar or Monterey Jack cheese
- 10 small corn tortillas
- Vegetable oil for frying
Instructions
- Cook the beef mixture: In a skillet over medium heat, cook the ground beef and diced onion until browned and fully cooked. Drain any excess fat. Stir in the minced chipotle peppers, ground cumin, smoked paprika, garlic powder, salt, and black pepper. Continue cooking for another 2–3 minutes to blend the flavors well. Remove from heat and let cool slightly.
- Prepare the tortillas: Warm the corn tortillas in a microwave or a dry skillet until they become pliable and easy to roll. Spoon about 2 tablespoons of the seasoned beef mixture onto each tortilla, add a small pinch of shredded cheese, then roll the tortillas tightly. Secure each rolled taco with a toothpick if needed to keep them in place.
- Fry the tacos: In a skillet, heat about 1/2 inch of vegetable oil over medium heat. Carefully place the rolled tacos seam-side down into the hot oil, frying in batches. Cook for 2–3 minutes on each side or until the tacos are golden brown and crispy. Remove and drain them on paper towels to remove excess oil.
- Serve: Serve the crispy rolled chipotle beef tacos hot with your favorite toppings such as sour cream, guacamole, salsa, or chopped cilantro for added flavor and freshness.
Notes
- For a baked version, brush the rolled tacos with oil and bake at 425°F (220°C) for 12–15 minutes, flipping halfway through to crisp both sides evenly.
