Ingredients
Scale
Potatoes
- 2 lbs (900g) baby potatoes, halved
Seasoning and Flavor
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 tsp paprika (optional for color)
- 1 tsp dried thyme or rosemary (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it’s at the perfect temperature for roasting the potatoes evenly and achieving a crispy texture.
- Toss potatoes with seasoning: In a large bowl, combine the halved baby potatoes with the melted butter, olive oil, minced garlic, salt, black pepper, paprika, and your choice of dried thyme or rosemary. Toss thoroughly until all potatoes are well coated with the flavorful mixture.
- Arrange on baking sheet: Spread the seasoned potatoes in a single layer on a baking sheet. Make sure they are not overcrowded to allow even roasting and maximum crispiness on all sides.
- Roast the potatoes: Place the baking sheet in the preheated oven and roast for 35-40 minutes. Flip the potatoes halfway through cooking to ensure they brown evenly and develop a golden, crispy exterior while staying soft inside.
- Garnish and serve: Once roasted, remove the potatoes from the oven and transfer them to a serving dish. Sprinkle with freshly chopped parsley to add a fresh, vibrant touch before serving.
Notes
- For extra crispiness, you can parboil the potatoes for 5 minutes before roasting.
- Use smoked paprika instead of regular for a smoky flavor twist.
- Feel free to switch herbs based on preference, such as rosemary instead of thyme.
- Leftovers can be reheated in the oven or air fryer to maintain crispiness.
