Instructions
- Batter Preparation: In a medium bowl, whisk together the eggs, milk, and vanilla extract until smooth. In a separate bowl, combine the flour, sugar, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, whisking until a smooth batter forms.
- Frying: Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat to 350°F (175°C). Transfer the batter to a piping bag or squeeze bottle with a medium tip. Carefully pipe 3–4-inch sticks into the hot oil, frying a few at a time without overcrowding. Fry for 1–2 minutes per side, or until golden brown and crispy.
- Serving: Use a slotted spoon to transfer the funnel cake sticks to a paper towel–lined plate to drain. While still warm, dust generously with powdered sugar. Serve immediately.
