Ingredients
Scale
Zucchini Fries
- 2 medium zucchinis
- 1/2 cup breadcrumbs (preferably panko for extra crispiness)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 2 large eggs
- Olive oil spray (or cooking spray)
Instructions
- Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice each zucchini into 1/2-inch thick strips resembling fries.
- Prepare the Breading: In a shallow bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper until well combined.
- Dunk in Egg: Beat the eggs in a separate shallow bowl. Dip each zucchini strip into the beaten eggs, coating thoroughly, then transfer to the breadcrumb mixture. Press gently to ensure the coating adheres well.
- Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure even cooking.
- Air Fry the Zucchini Fries: Lightly spray the air fryer basket with olive oil or cooking spray. Arrange the zucchini fries in a single layer inside the basket, leaving space between pieces. Spray the tops lightly with olive oil to promote crispiness.
- Cook: Air fry at 400°F (200°C) for 10-12 minutes, shaking or turning the basket halfway through cooking to ensure even browning and crispiness.
- Serve: Remove the fries from the air fryer and serve immediately, ideally with marinara sauce or ranch dressing for dipping.
Notes
- Using panko breadcrumbs enhances crispiness for the fries.
- Adjust salt to taste, keeping dietary preferences in mind.
- Make sure not to overcrowd the air fryer basket to allow even cooking and crispiness.
- Spraying olive oil on both the basket and fries helps achieve better browning.
- Serve immediately for the best texture as fries tend to soften when cooled.
- This recipe can be made gluten-free by using gluten-free breadcrumbs.
