Description

A quick and delicious creamy parmesan spinach mushroom pasta recipe that combines tender sautéed mushrooms and wilted spinach in a rich, cheesy sauce. Perfect for a comforting weeknight dinner ready in just 20 minutes.

Ingredients

Scale

Pasta

  • 8 oz pasta

Vegetables

  • 1 cup mushrooms, sliced
  • 2 cups spinach

Sauce

  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente, then drain and set aside to keep warm.
  2. Sauté the Vegetables: Heat olive oil in a pan over medium heat. Add the sliced mushrooms and sauté for 4-5 minutes until they are softened and slightly browned.
  3. Add Spinach: Add the fresh spinach to the pan with the mushrooms. Cook for an additional 2-3 minutes, stirring occasionally, until the spinach is wilted.
  4. Prepare the Sauce: Stir in the heavy cream, garlic powder, parmesan cheese, salt, and pepper into the pan. Continue cooking for 2-3 minutes until the sauce thickens and becomes creamy.
  5. Combine: Add the cooked pasta to the pan. Toss and stir well to coat the pasta evenly with the creamy parmesan mushroom and spinach sauce. Serve immediately for the best flavor and texture.

Notes

  • You can substitute heavy cream with half-and-half for a lighter sauce but it may be less creamy.
  • Use freshly grated parmesan for better flavor over pre-grated cheese.
  • Add a pinch of red pepper flakes for a subtle spicy kick.
  • This dish pairs well with a side salad or garlic bread for a complete meal.
