Description

A comforting and creamy mushroom garlic shrimp pasta perfect for quick weeknight dinners. This dish combines tender sautéed shrimp, flavorful mushrooms, and garlic in a luscious creamy sauce, tossed with your favorite pasta and topped with Parmesan and fresh spinach for a delightful meal.

Ingredients

Scale

Main Ingredients

  • 8 ounces Pasta (Choose your favorite type)
  • 1 pound Shrimp (Fresh or frozen, peeled and deveined)
  • 8 ounces Mushrooms (Sliced, any variety like button or cremini)
  • 4 cloves Garlic (Minced)
  • 1 cup Cream (Can substitute with half-and-half or non-dairy alternatives)
  • 2 tablespoons Olive Oil (Can use butter for different flavor)
  • 1/4 cup Parmesan Cheese (Sprinkled on top for extra flavor)
  • 1 cup Fresh Spinach (Optional, can swap with kale or omit)

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil. Add your favorite pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. Sauté Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Cook Mushrooms: Add the sliced mushrooms to the skillet. Sauté them for 5-7 minutes until they turn golden brown and tender.
  4. Add Shrimp: Place the peeled and deveined shrimp into the skillet. Cook for 3-5 minutes until the shrimp turn pink and opaque.
  5. Make Cream Sauce: Lower the heat and gently stir in the cream. Let it simmer for a few minutes, thickening the sauce slightly.
  6. Toss Pasta in Sauce: Add the cooked pasta to the skillet, tossing to coat each strand evenly with the creamy sauce. Heat through for an additional 1-2 minutes.
  7. Serve and Garnish: Plate the pasta and sprinkle with freshly grated Parmesan cheese. Add fresh spinach on top if using for a touch of color and nutrition.

Notes

  • You can substitute cream with half-and-half or a non-dairy alternative like coconut cream for a lighter or dairy-free option.
  • Butter can be used instead of olive oil for a richer flavor when sautéing.
  • Feel free to swap spinach with kale or omit it according to your preference.
  • Use freshly grated Parmesan for the best flavor.
  • Make sure not to overcook the shrimp to keep them tender and juicy.
