Ingredients
Scale
Wet Ingredients
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Mix-ins
- 2 cups old-fashioned oats
- 1 1/2 cups semisweet chocolate chips
- 1 cup chopped pecans or walnuts
- 1 cup sweetened shredded coconut
Instructions
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F and line two baking sheets with parchment paper to prevent sticking and ensure even baking.
- Cream Butter and Sugars: In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until the mixture is light and fluffy, creating a smooth base for your cookie dough.
- Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then mix in the vanilla extract for flavor.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon to evenly distribute the dry elements.
- Mix Dry Ingredients into Wet: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined to avoid overmixing which can toughen cookies.
- Fold in Mix-ins: Stir in the old-fashioned oats, semisweet chocolate chips, chopped nuts, and shredded coconut until evenly distributed throughout the dough.
- Shape Cookies and Bake: Drop rounded tablespoons of the cookie dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading. Bake for 10–12 minutes, or until the edges are golden brown and centers are just set.
- Cool Cookies: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely, ensuring they firm up and are easy to handle.
Notes
- You can freeze the cookie dough balls and bake them straight from frozen. Just add an extra 1–2 minutes to the baking time to ensure they are cooked through.
- For a different flavor twist, try substituting white chocolate chips or adding dried cranberries.
