Garlic Broth:
- 2 heads garlic, cloves peeled and smashed

- 1 bay leaf

Finish and Serving:
- 2 large egg yolks
- ½ cup grated Parmesan cheese
- 4 slices crusty French bread, toasted
Instructions
- Prepare Garlic Broth: Heat olive oil in a saucepan, add garlic, cook until fragrant. Add onions, cook until translucent. Pour in broth, add thyme, bay leaf, simmer for 25-30 mins. Remove thyme and bay leaf.
- Prepare Egg Mixture: In a bowl, whisk egg yolks with Parmesan. Slowly temper with hot broth, then stir into soup gently.
- Season and Serve: Season soup, serve hot with toasted bread.
