- 1/4 cup unsalted butter, melted
- 1/4 cup vegetable oil
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C) and grease an 8×8-inch baking dish or a cast iron skillet.
- Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk the milk, eggs, melted butter, and oil until well combined.
- Mix Batter: Pour the wet ingredients into the dry ingredients and stir just until mixed—do not overmix.
- Bake: Pour the batter into the prepared pan, smooth the top, and bake for 20–25 minutes until golden and a toothpick comes out clean.
- Serve: Let cool slightly before slicing and serving.
Notes
- For a sweeter version, increase the sugar to 1/3 cup.
- Add diced jalapeños, corn kernels, or shredded cheddar cheese for extra flavor.
