For the Filling:

  • 4 large egg yolks
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 cup canned coconut milk, full fat

Optional Topping:

  • Whipped cream
  • Toasted coconut flakes
  • Extra lime zest

Instructions

  1. Preheat the oven: Preheat the oven to 350°F.
  2. Prepare the Crust: Mix graham cracker crumbs, shredded coconut, melted butter, and sugar. Press into a tart pan and bake for 10 minutes.
  3. Make the Filling: Whisk together sweetened condensed milk, egg yolks, lime juice, lime zest, and coconut milk. Pour into the crust and bake for 15–18 minutes.
  4. Cool and Serve: Let the tart cool, then refrigerate for 2 hours. Garnish with whipped cream, coconut flakes, and lime zest.
