Description

A festive and refreshing Christmas Salad featuring mixed greens, juicy pomegranate seeds, crumbled feta cheese, candied nuts, crisp apple slices, and a tangy homemade vinaigrette. Perfect for holiday gatherings or a light winter meal.

Ingredients

Scale

Salad Ingredients

  • 5 cups mixed greens (such as arugula, baby spinach, and romaine)
  • 1 cup pomegranate seeds
  • 1/2 cup crumbled feta cheese
  • 1/2 cup candied pecans or walnuts
  • 1/2 cup thinly sliced red apple or pear
  • 1/4 cup thinly sliced red onion

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the Salad Ingredients: In a large salad bowl, add the mixed greens, pomegranate seeds, crumbled feta cheese, candied pecans or walnuts, thinly sliced red apple or pear, and thinly sliced red onion. Toss gently to mix the ingredients evenly.
  2. Prepare the Dressing: In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and black pepper until the dressing is well combined and emulsified.
  3. Dress and Toss: Just before serving, drizzle the dressing over the salad and toss gently to coat all ingredients evenly with the dressing.
  4. Serve: Serve the salad immediately for the freshest taste and texture.

Notes

  • This salad can be prepped ahead by preparing the salad ingredients and storing the dressing separately to keep greens crisp.
  • Substitute goat cheese for feta for a different tangy flavor.
  • Swap pomegranate seeds with dried cranberries if preferred.
  • For a heartier dish, add grilled chicken or roasted butternut squash.
