Description

  • 2 cups almond flour
  • 1/4 cup sunflower seed butter
  • 1 teaspoon pure vanilla extract

  • 2–3 tablespoons water

  • 1 1/4 cups dark chocolate chips
  • 1 teaspoon coconut oil


Instructions

  1. Pit and Process Dates: Pit the dates and place them in a food processor. Add almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water. Pulse the mixture until it reaches a thick cookie dough texture.
  2. Adjust Consistency: Check the dough consistency and add an additional tablespoon of water if needed to make it sticky yet moldable.
  3. Press into Pan: Line an 8×8 inch baking pan with parchment paper. Press the dough evenly and firmly into the pan using your hands or a spatula.
  4. Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips together with the coconut oil until smooth and fully combined.
  5. Top and Chill: Pour the melted chocolate over the date-almond dough in the pan. Use a spatula to spread the chocolate evenly. Refrigerate the pan for 30 minutes or until the chocolate topping is set.
  6. Slice and Enjoy: Once the chocolate has hardened, remove the bars from the pan using the parchment paper edges. Slice into 12 bars. Store them in the refrigerator for freshness.
