Scale
Main Ingredients
- 2 cups fresh dates
- 2 cups almond flour
- 1/4 cup sunflower seed butter
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 2–3 tablespoons water
Topping
- 1 1/4 cups dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Pit and Process Dates: Pit the dates and place them in a food processor. Add almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water. Pulse the mixture until it reaches a thick cookie dough texture.
- Adjust Consistency: Check the dough consistency and add an additional tablespoon of water if needed to make it sticky yet moldable.
- Press into Pan: Line an 8×8 inch baking pan with parchment paper. Press the dough evenly and firmly into the pan using your hands or a spatula.
- Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips together with the coconut oil until smooth and fully combined.
- Top and Chill: Pour the melted chocolate over the date-almond dough in the pan. Use a spatula to spread the chocolate evenly. Refrigerate the pan for 30 minutes or until the chocolate topping is set.
- Slice and Enjoy: Once the chocolate has hardened, remove the bars from the pan using the parchment paper edges. Slice into 12 bars. Store them in the refrigerator for freshness.
Notes
- Use fresh, soft dates for the best texture and sweetness.
- Almond flour can be substituted with finely ground almonds if unavailable.
- Adjust water quantity carefully to avoid overly wet dough.
- Store bars refrigerated to maintain firmness and freshness.
- For a different flavor, try swapping sunflower seed butter with almond or cashew butter.
