Chicken:
- 1 1/2 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
Vegetables:
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach, roughly chopped
Seasonings and Dairy:
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and black pepper, to taste
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Sauté onions and garlic: In a large skillet over medium heat, heat olive oil. Add diced onion and sauté for 2–3 minutes until softened. Add garlic and cook for another minute.
- Cook mushrooms: Stir in the mushrooms and cook for 5–6 minutes until tender and most of the moisture has evaporated.
- Cook chicken: Add chicken pieces, thyme, paprika, salt, and pepper. Cook until chicken is no longer pink on the outside, about 5 minutes.
- Add spinach and cream: Stir in the spinach and cook until wilted. Pour in the heavy cream and Parmesan cheese. Cook until the sauce thickens.
- Bake: Transfer the mixture to a greased baking dish. Sprinkle mozzarella cheese over the top. Bake for 15–20 minutes until cheese is melted and bubbly. Serve hot.
Notes
- For added flavor, mix in sun-dried tomatoes or top with crushed red pepper flakes.
- This dish can be made ahead and reheated.
