Description

Chicken:

  • 1 1/2 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)

Vegetables:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach, roughly chopped

Seasonings and Dairy:

  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sauté onions and garlic: In a large skillet over medium heat, heat olive oil. Add diced onion and sauté for 2–3 minutes until softened. Add garlic and cook for another minute.
  3. Cook mushrooms: Stir in the mushrooms and cook for 5–6 minutes until tender and most of the moisture has evaporated.
  4. Cook chicken: Add chicken pieces, thyme, paprika, salt, and pepper. Cook until chicken is no longer pink on the outside, about 5 minutes.
  5. Add spinach and cream: Stir in the spinach and cook until wilted. Pour in the heavy cream and Parmesan cheese. Cook until the sauce thickens.
  6. Bake: Transfer the mixture to a greased baking dish. Sprinkle mozzarella cheese over the top. Bake for 15–20 minutes until cheese is melted and bubbly. Serve hot.

Notes

  • For added flavor, mix in sun-dried tomatoes or top with crushed red pepper flakes.
