Pasta:

  • 12 ounces fettuccine or penne pasta

Chicken:

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic (minced)

Sauce:

  • 2 cups fresh spinach (roughly chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Cook Pasta: Boil pasta according to package instructions, drain, and set aside.
  2. Cook Chicken: Season chicken with salt and pepper. Sauté in olive oil until browned and cooked through. Remove from skillet.
  3. Make Sauce: Sauté garlic, add spinach and tomatoes. Pour in cream, broth, Parmesan, seasoning, and red pepper flakes. Simmer until thickened.
  4. Combine: Return chicken to skillet, add pasta, toss to coat.
