For the Chicken:
- 1 ½ pounds boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon ground cumin

- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Bowls:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium red onion, sliced
- 2 cups cooked white or brown rice
- 1 cup black beans, drained and rinsed
- ½ cup corn kernels (fresh or frozen)
- 1 avocado, sliced
- ¼ cup chopped fresh cilantro
- lime wedges for serving
Instructions
- Marinate the Chicken: In a large bowl, combine the sliced chicken, olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Let marinate for at least 15 minutes.
- Cook the Chicken: Heat a large skillet over medium-high heat and cook the marinated chicken for 5–7 minutes until fully cooked and slightly charred. Remove and set aside.
- Sauté the Vegetables: In the same skillet, sauté the bell peppers and onion for 5–7 minutes until tender and caramelized.
- Assemble the Bowls: Divide rice among bowls and top with chicken, sautéed peppers and onions, black beans, corn, avocado slices, and cilantro. Serve with lime wedges.
Notes
- For a low-carb version, substitute cauliflower rice.
- Use pre-cooked rotisserie chicken for convenience.
