For the Chicken:

  • 1 ½ pounds boneless, skinless chicken breasts, sliced into thin strips

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Bowls:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 cups cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • ½ cup corn kernels (fresh or frozen)
  • 1 avocado, sliced
  • ¼ cup chopped fresh cilantro
  • lime wedges for serving

Instructions

  1. Marinate the Chicken: In a large bowl, combine the sliced chicken, olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Let marinate for at least 15 minutes.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and cook the marinated chicken for 5–7 minutes until fully cooked and slightly charred. Remove and set aside.
  3. Sauté the Vegetables: In the same skillet, sauté the bell peppers and onion for 5–7 minutes until tender and caramelized.
  4. Assemble the Bowls: Divide rice among bowls and top with chicken, sautéed peppers and onions, black beans, corn, avocado slices, and cilantro. Serve with lime wedges.

Notes

  • For a low-carb version, substitute cauliflower rice.
