- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 3 cloves garlic (minced)
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup chicken broth
- 1/2 cup dry red wine
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 cup sliced mushrooms
- 2 tablespoons capers (optional)

Instructions
- Prepare the Chicken: Heat olive oil in a large skillet. Season chicken thighs with salt and pepper, then sear for 4-5 minutes per side. Remove and set aside.
- Make the Sauce: In the same skillet, sauté onion and bell peppers until softened. Add garlic and cook briefly. Pour in crushed tomatoes, broth, and wine. Season with oregano, basil, and red pepper flakes. Return chicken to the pan, cover, and simmer for 30 minutes.
- Finish and Serve: Add mushrooms and capers, simmer for 10 more minutes. Garnish with parsley and serve hot over pasta, polenta, or bread.
