For the Panini:
- 2 cups cooked chicken breast (shredded or sliced)
- 1 ripe avocado (sliced)
- 4 slices provolone or mozzarella cheese
- 4 slices sourdough or ciabatta bread
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon olive oil or softened butter (for grilling)
Instructions
- Prepare the Mayo Mixture: In a small bowl, combine mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
- Assemble the Panini: Spread the mayo mixture on one side of each bread slice. Layer cheese, chicken, and avocado on two slices, then top with the remaining bread, mayo side in.
