For the Chicken a la King:

  • 1/4 cup unsalted butter
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 8 oz mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 cups cooked chicken breast, diced
  • 1 cup frozen peas, thawed
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large skillet over medium heat, melt butter. Add onion, bell pepper, and mushrooms, and sauté for 4 to 5 minutes until softened.
  2. Stir in flour and cook for 1 minute, stirring constantly. Gradually whisk in chicken broth, then milk, cooking until mixture begins to thicken, about 3 to 4 minutes.
  3. Stir in heavy cream, chicken, peas, salt, pepper, and paprika. Simmer gently for 5 minutes until heated through and slightly thickened.
  4. Sprinkle with parsley before serving.

Notes

  • Serve over puff pastry shells, biscuits, rice, or pasta.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently over low heat.
  • For a lighter version, use half-and-half instead of heavy cream.
