For the Chicken a la King:
- 1/4 cup unsalted butter
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 8 oz mushrooms, sliced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 2 cups cooked chicken breast, diced
- 1 cup frozen peas, thawed
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 2 tbsp chopped fresh parsley
Instructions
- In a large skillet over medium heat, melt butter. Add onion, bell pepper, and mushrooms, and sauté for 4 to 5 minutes until softened.
- Stir in flour and cook for 1 minute, stirring constantly. Gradually whisk in chicken broth, then milk, cooking until mixture begins to thicken, about 3 to 4 minutes.
- Stir in heavy cream, chicken, peas, salt, pepper, and paprika. Simmer gently for 5 minutes until heated through and slightly thickened.
- Sprinkle with parsley before serving.
Notes
- Serve over puff pastry shells, biscuits, rice, or pasta.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently over low heat.
- For a lighter version, use half-and-half instead of heavy cream.
