Instructions

  1. Preheat oven and prepare baking sheets: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Mix in the pumpkin puree, egg yolk, and vanilla extract until smooth.
  3. Combine wet and dry ingredients: In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, cinnamon, and nutmeg. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  4. Prepare cinnamon-sugar coating: In a small bowl, combine the granulated sugar and ground cinnamon.
  5. Shape and coat the dough: Scoop the dough into 1½-tablespoon-sized balls and roll each ball in the cinnamon-sugar mixture. Place on prepared baking sheets, spacing them 2 inches apart.
  6. Bake the cookies: Bake for 9–11 minutes, until the edges are set and the centers appear slightly underdone. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
