Ingredients
Scale
Dough Ingredients
- 2 cups self-rising flour (or all-purpose flour + 2 tsp baking powder + ½ tsp salt)
- 1 cup plain Greek yogurt (full-fat recommended)
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder (optional)
- ¼ tsp black pepper
- 1–2 tbsp milk (only if dough is too dry)
Topping Ingredients
- ¼ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 1 tbsp melted butter (for brushing)
- Chopped fresh parsley (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
- Make the Dough: In a large mixing bowl, combine the self-rising flour, Greek yogurt, shredded cheddar, grated Parmesan, garlic powder, and black pepper. Stir until a shaggy dough forms. If the dough feels too dry and crumbly, add 1–2 tablespoons of milk to achieve a workable consistency.
- Shape the Loaf: Lightly flour your work surface and turn the dough out onto it. Shape it into a rustic round loaf about 6–7 inches in diameter. Transfer the loaf onto the prepared baking sheet. Using a sharp knife, score an “X” on top of the dough to allow for expansion during baking.
- Add Toppings: Sprinkle the remaining shredded cheddar and grated Parmesan cheeses evenly over the top of the loaf.
- Bake: Place the loaf in the preheated oven and bake for 20–25 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
- Brush with Butter: Immediately after removing the bread from the oven, brush the top generously with melted butter to add richness and a glossy finish.
- Cool and Serve: Let the bread cool for about 5 minutes. Slice it, garnish with chopped fresh parsley if desired, and serve the bread warm for the best flavor and texture.
Notes
- Use self-rising flour for convenience, or make your own by mixing all-purpose flour with baking powder and salt.
- Full-fat Greek yogurt adds moisture and richness; plain yogurt can be used but may affect texture.
- Adjust milk quantity carefully; the dough should be moist but not sticky.
- Scoring the loaf helps control how it expands and gives it a rustic look.
- Brush with butter while warm to maximize flavor and shine.
- Store any leftovers wrapped tightly at room temperature for up to 2 days, or freeze for longer storage.
