- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (1 oz) packet taco seasoning
- 1/2 cup water
- 1 (10 oz) can red enchilada sauce
- 1 (14 oz) can diced tomatoes, drained
- 1 (20 oz) package refrigerated cheese tortellini
- 1 1/2 cups shredded Mexican cheese blend
- 2 tablespoons chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil and cook the refrigerated cheese tortellini according to package directions. Once cooked, drain the tortellini and set it aside.
- Brown the Beef: While the tortellini cooks, heat a large skillet over medium heat. Add the ground beef and cook until browned.
- Sauté Onion and Garlic: Add the diced onion to the skillet and cook for 2 to 3 minutes until softened. Stir in the minced garlic and cook for another minute to release its aroma.
- Add Seasoning: Drain any excess fat from the skillet. Stir in the taco seasoning packet and 1/2 cup water. Allow mixture to simmer for 2 to 3 minutes until slightly thickened.
- Combine Sauces and Tomatoes: Pour in the red enchilada sauce and add the drained diced tomatoes. Stir well to combine the flavors.
- Mix Tortellini with Sauce: Add the cooked tortellini into the skillet and mix everything until the tortellini is evenly coated with the sauce and beef mixture.
- Melting Cheese: Sprinkle the shredded Mexican cheese blend evenly over the top of the skillet contents. Reduce heat to low and cover the skillet for 3 to 5 minutes until the cheese is fully melted.
- Garnish and Serve: Remove the skillet from heat, garnish with fresh chopped cilantro if desired, and serve the Cheesy Beef Enchiladas Tortellini hot.
Notes
- For extra heat, add chopped jalapeños or a dash of hot sauce to the beef mixture.
