Marinade:
- 2 pounds bone-in, skin-on chicken thighs or drumsticks
- 2 tablespoons hoisin sauce
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon Chinese Shaoxing wine (or dry sherry)
- 1 tablespoon ketchup
- 1 teaspoon five-spice powder
- 2 cloves garlic (minced)
- ½ teaspoon grated fresh ginger
- red food coloring (optional, for classic color)
Instructions
- Prepare the Marinade: In a medium bowl, whisk together hoisin sauce, honey, soy sauce, oyster sauce, Shaoxing wine, ketchup, five-spice powder, garlic, ginger, and red food coloring.
- Marinate the Chicken: Pat the chicken dry and place it in a bag or dish. Pour the marinade over the chicken, coat well, cover, and refrigerate for at least 4 hours or overnight.
- Cook the Chicken: Preheat the oven to 400°F. Line a baking sheet with foil and place a wire rack on top. Arrange chicken on the rack, skin side up. Roast for 35–45 minutes, basting with marinade, until caramelized and cooked through. Broil for extra char.
- Rest and Serve: Let the chicken rest for 5 minutes before serving.
