Marinade:

  • 2 pounds bone-in, skin-on chicken thighs or drumsticks
  • 2 tablespoons hoisin sauce
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Chinese Shaoxing wine (or dry sherry)
  • 1 tablespoon ketchup
  • 1 teaspoon five-spice powder
  • 2 cloves garlic (minced)
  • ½ teaspoon grated fresh ginger
  • red food coloring (optional, for classic color)

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together hoisin sauce, honey, soy sauce, oyster sauce, Shaoxing wine, ketchup, five-spice powder, garlic, ginger, and red food coloring.
  2. Marinate the Chicken: Pat the chicken dry and place it in a bag or dish. Pour the marinade over the chicken, coat well, cover, and refrigerate for at least 4 hours or overnight.
  3. Cook the Chicken: Preheat the oven to 400°F. Line a baking sheet with foil and place a wire rack on top. Arrange chicken on the rack, skin side up. Roast for 35–45 minutes, basting with marinade, until caramelized and cooked through. Broil for extra char.
  4. Rest and Serve: Let the chicken rest for 5 minutes before serving.
