  • 7 oz (200 g) dark chocolate (70% cocoa), finely chopped
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 4 large eggs, separated
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. Melt Chocolate: Melt dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Set aside to cool slightly.
  3. Prepare Batter: Beat butter and sugar until light. Add egg yolks one at a time, then mix in vanilla extract. Stir in melted chocolate and fold in ground almonds.
  4. Beat Egg Whites: In a separate bowl, beat egg whites with salt until stiff peaks form. Gently fold into chocolate-almond mixture in three additions.
  5. Bake: Pour batter into prepared pan and bake for 35–40 minutes. Cool in pan, then transfer to a wire rack to cool completely.
  6. Finish: Dust with powdered sugar before serving.
