  • 2 cups chicken broth
  • 2 green onions (sliced, for garnish)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil: In a large skillet or saucepan, heat olive oil over medium heat. Add the ground meat and cook until browned, breaking it apart with a spoon, about 5–6 minutes. Drain excess fat if needed.
  2. Add vegetables and spices: Add chopped onion, bell pepper, celery, and garlic. Sauté until vegetables are softened, about 4–5 minutes. Stir in Cajun seasoning, paprika, cayenne pepper (if using), and uncooked rice. Cook for 1–2 minutes.
  3. Cook rice: Pour in the chicken broth, stir well, and bring to a boil. Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
  4. Finish and serve: Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork, adjust seasoning if needed, and garnish with sliced green onions before serving.
