Description

  • 1 (10-ounce) can diced tomatoes with green chiles, undrained
  • 1 cup cooked white or brown rice
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • Chopped fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Heat the olive oil and cook beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
  2. Add onions and garlic: Stir in the diced onion and cook for 2 to 3 minutes until softened, then add the minced garlic and cook for another minute until fragrant.
  3. Combine beans, veggies, and seasonings: Add black beans, diced tomatoes with green chiles, frozen corn, cooked rice, taco seasoning, and water. Stir everything together until evenly combined.
  4. Simmer the mixture: Let the skillet simmer for 5 to 7 minutes, allowing the flavors to meld and the mixture to thicken slightly.
  5. Add cheese and melt: Sprinkle shredded cheese over the top of the skillet, cover it, and cook for 2 to 3 minutes more until the cheese has melted completely.
  6. Garnish and serve: Remove the skillet from heat. Garnish with chopped fresh cilantro and lime wedges if desired. Serve warm directly from the skillet for a hearty meal.
