Ingredients
Scale
Meat and Vegetables
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans, drained and rinsed
- 1/2 cup frozen corn
Other Ingredients
- 1 (10-ounce) can diced tomatoes with green chiles, undrained
- 1 cup cooked white or brown rice
- 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
- 1/4 cup water
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- Chopped fresh cilantro for garnish (optional)
- Lime wedges for serving (optional)
Instructions
- Heat the olive oil and cook beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
- Add onions and garlic: Stir in the diced onion and cook for 2 to 3 minutes until softened, then add the minced garlic and cook for another minute until fragrant.
- Combine beans, veggies, and seasonings: Add black beans, diced tomatoes with green chiles, frozen corn, cooked rice, taco seasoning, and water. Stir everything together until evenly combined.
- Simmer the mixture: Let the skillet simmer for 5 to 7 minutes, allowing the flavors to meld and the mixture to thicken slightly.
- Add cheese and melt: Sprinkle shredded cheese over the top of the skillet, cover it, and cook for 2 to 3 minutes more until the cheese has melted completely.
- Garnish and serve: Remove the skillet from heat. Garnish with chopped fresh cilantro and lime wedges if desired. Serve warm directly from the skillet for a hearty meal.
Notes
- You can swap ground beef for ground turkey, chicken, or a plant-based alternative.
- Leftovers make excellent burrito or taco fillings.
- Add avocado, sour cream, or hot sauce for extra flavor and creaminess.
