Perfect for a quick treat or dessert, these cookies feature chocolate chips for extra indulgence and require only a few simple ingredients and 30 minutes to prepare.
Ingredients
Scale
Cookie Dough
- 18.3 oz box Fudge Brownie Mix
- ½ cup vegetable oil
- 2 large eggs
Add-ins
- 1 cup chocolate chips (preferably dark chocolate)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Dough: In a large bowl, combine the brownie mix, vegetable oil, and eggs. Stir well until a soft, uniform dough forms, ensuring all dry ingredients are fully incorporated.
- Add Chocolate Chips: Gently fold in the chocolate chips to distribute them evenly throughout the dough for bursts of chocolate in every bite.
- Form Cookies: Use a cookie scoop or spoon to drop 1-1/2-inch thick dough balls onto the prepared baking sheet. Space them about 2 inches apart to allow room for spreading.
- Optional Topping: For extra richness and visual appeal, add a few additional chocolate chips on top of each dough ball before baking.
- Bake: Bake in the preheated oven for 10 minutes. After 10 minutes, check to see if the cookies have set. If they need more time, bake for an additional 1-2 minutes, taking care not to overbake.
- Cool: Remove the cookies from the oven and let them cool on the baking sheet for about 10 minutes to firm up. Then transfer to a wire cooling rack to cool completely.
Notes
- Using dark chocolate chips provides a richer flavor but milk or semi-sweet chips can be used as alternatives.
- Do not overbake the cookies; they will firm up as they cool for a soft and chewy texture.
- For a gluten-free option, use a gluten-free brownie mix.
- These cookies store well in an airtight container at room temperature for up to 3 days.
- Adding nuts like walnuts or pecans can add extra crunch if desired.
