Description

This comforting Broccoli, Rice, Cheese, and Chicken Casserole combines tender cooked rice, shredded chicken, fresh or frozen broccoli, creamy soups, and melted cheddar cheese baked to perfection. It’s a hearty, easy-to-make dish ideal for family dinners, offering a rich blend of creamy, cheesy, and savory flavors all in one satisfying casserole.

Ingredients

Scale

Liquids and Dairy

  • 2 cups water
  • 1/4 cup butter
  • 1 cup milk

Grains

  • 2 cups uncooked rice

Proteins

  • 2 cups cooked chicken, shredded

Vegetables

  • 1 small white onion, diced
  • 16 ounces broccoli pieces (fresh or frozen)

Canned Soups

  • 1 (10-ounce) can of cream of chicken soup
  • 1 (10-ounce) can of cream of mushroom soup

Cheese

  • 2 cups Cheddar cheese, shredded

Instructions

  1. Preheat Oven and Cook Rice: Preheat your oven to 350°F (175°C). Cook the rice according to the package instructions until tender and fully cooked.
  2. Combine Ingredients: In a 9×13-inch baking pan, mix the cooked rice with the shredded chicken. Add the cream of chicken soup, cream of mushroom soup, butter, broccoli pieces, and diced onion. Stir everything together thoroughly with 1 cup of the shredded Cheddar cheese to incorporate the flavors evenly.
  3. Bake the Casserole: Place the baking pan in the preheated oven and bake for 30 to 35 minutes. In the last few minutes of baking, sprinkle the remaining 1 cup of shredded Cheddar cheese on top of the casserole and allow it to melt completely for a deliciously cheesy finish.
  4. Rest and Serve: Remove the casserole from the oven and let it rest for 5 minutes to set slightly. Serve hot, optionally with a side of dinner salad or breadsticks for a complete meal. Enjoy your creamy, cheesy broccoli, rice, and chicken casserole!

Notes

  • You can use fresh or frozen broccoli pieces, but if using frozen, thaw and drain excess moisture before adding.
  • Shredded rotisserie chicken is a great shortcut for the cooked chicken in this recipe.
  • For a sharper flavor, feel free to use sharp or extra-sharp Cheddar cheese.
  • This casserole can be prepared ahead and refrigerated; just add a few extra minutes to the baking time if baking from cold.
  • Leftovers store well in the refrigerator for up to 3 days and reheat nicely in the oven or microwave.
