Instructions

  1. Heat oils and brown chicken: Heat the sesame oil and olive oil in a large pot over medium heat. Add the chicken pieces and cook for 4 to 5 minutes until lightly browned.
  2. Add aromatics: Stir in the minced garlic and fresh ginger and cook for 30 seconds until fragrant.
  3. Add broth and seasonings: Pour in the low-sodium chicken broth and bring to a gentle boil. Add the soy sauce, fish sauce if using, and white pepper.
  4. Simmer chicken: Reduce the heat to a simmer and cook for 10 minutes until the chicken is fully cooked.
  5. Add vegetables and noodles: Stir in the sliced mushrooms, carrots, and rice noodles if using. Simmer for an additional 3 to 4 minutes until the vegetables are tender and noodles are cooked.
