Description

This Blackberry Pretzel Dessert is a delightful layered treat featuring a crunchy pretzel crust topped with a creamy cream cheese layer and a vibrant blackberry Jell-O filling. Perfectly chilled and garnished with fresh blackberries and pretzel pieces, it offers a sweet and tangy flavor with a pleasant contrast of textures, ideal for special occasions or summer gatherings.

Ingredients

Scale

Crust

  • 2 cups crushed pretzels
  • 3/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar

Cream Cheese Layer

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (such as Cool Whip)

Blackberry Jell-O Layer

  • 1 (6 oz) package blackberry-flavored Jell-O
  • 2 cups boiling water
  • 1/2 cup cold water
  • 2 cups fresh blackberries (or thawed frozen blackberries)

Topping and Garnish

  • 1 cup whipped topping (such as Cool Whip)
  • Fresh blackberries (optional, for garnish)
  • Pretzel pieces (optional, for garnish)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the pretzel crust.
  2. Make crust: In a medium bowl, mix together the crushed pretzels, melted butter, and granulated sugar until well combined. Press this mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust. Bake for 10 minutes, then allow to cool completely.
  3. Prepare cream cheese layer: Using a mixer, beat the softened cream cheese with powdered sugar until the texture is smooth and creamy. Gently fold in 1 cup of whipped topping to lighten the mixture. Spread this cream cheese layer evenly over the cooled pretzel crust. Place the dish in the refrigerator to chill.
  4. Make blackberry Jell-O layer: Dissolve the blackberry-flavored Jell-O powder in 2 cups of boiling water, stirring well until fully dissolved. Stir in 1/2 cup of cold water and let the mixture cool slightly but not set. Fold in the 2 cups of fresh or thawed blackberries. Pour this Jell-O mixture carefully over the chilled cream cheese layer. Return to the refrigerator and chill until firmly set.
  5. Add topping and garnish: Once the Jell-O layer is set, spread the remaining 1 cup of whipped topping evenly over the dessert. Garnish with fresh blackberries and pretzel pieces as desired. Serve the dessert chilled for best flavor and texture.

Notes

  • Ensure the pretzel crust is completely cool before adding the cream cheese layer to prevent melting or mixing.
  • You can substitute frozen blackberries—just thaw them thoroughly and drain excess liquid before use.
  • For added texture, reserve some pretzel pieces to sprinkle on top as garnish.
  • This dessert is best made a few hours ahead or the day before serving to allow thorough chilling and setting.
  • To cut calories, consider using light cream cheese and reduced-fat whipped topping.
