Instructions
- Cook the Beef: In a skillet over medium heat, brown the ground beef, breaking it apart as it cooks until no longer pink. Add the diced onion and continue cooking until softened, roughly 3 to 4 minutes. Stir in the minced garlic, taco seasoning, salt, and black pepper, cooking for another minute to combine flavors. Pour in the tomato sauce and let the mixture simmer for 3 to 5 minutes until slightly thickened, then remove from heat.
- Prepare the Quesadillas: Heat a separate skillet over medium heat and lightly grease with olive oil or butter. Place one flour tortilla in the skillet. Sprinkle half of the tortilla surface evenly with cheese, then add a layer of the cooked beef mixture on top, followed by a little more cheese.
- Cook and Fold: Fold the tortilla over the filling and cook for 2 to 3 minutes per side until the tortilla is golden brown and the cheese has fully melted. Use a spatula to carefully flip the quesadilla and cook the other side.
- Repeat and Serve: Repeat the assembly and cooking process with the remaining tortillas and beef mixture. Once cooked, slice each quesadilla into wedges and serve warm, garnished with fresh chopped cilantro, sour cream, and salsa if desired.
