Berry Tiramisu Trifle is a delightful no-bake dessert combining the creamy richness of mascarpone and whipped cream with the fresh tanginess of mixed berries. Ladyfinger cookies soaked lightly in orange or berry juice create a soft base layered with luscious mascarpone mixture and vibrant strawberries, raspberries, and blueberries, making it a perfect refreshing treat for warm days or any occasion.

Mascarpone Cream Mixture

  • 1 cup heavy whipping cream
  • 8 oz mascarpone cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest

Ladyfingers and Juice

  • 1/2 cup orange juice or berry juice
  • 24 ladyfinger cookies

Berries and Garnish

  • 1 cup sliced strawberries
  • 1 cup raspberries
  • 1 cup blueberries
  • Fresh mint for garnish (optional)


Instructions

  1. Prepare the Mascarpone Cream: In a large mixing bowl, whip the heavy cream until soft peaks form. Add the mascarpone cheese, powdered sugar, vanilla extract, and lemon zest. Beat the mixture until it becomes smooth and creamy.
  2. Soften Ladyfingers: Pour the orange or berry juice into a shallow dish. Quickly dip each ladyfinger cookie one at a time into the juice just enough to soften without soaking them, as they can become soggy.
  3. Layer the Trifle: Arrange half of the soaked ladyfingers in the bottom of a trifle dish or large glass bowl to form the first layer. Spread half of the mascarpone cream evenly over the ladyfingers. Next, spread half of the mixed berries on top of the cream layer.
  4. Repeat Layers: Repeat the layering process using the remaining ladyfingers, mascarpone cream, and mixed berries.
  5. Chill: Cover the assembled trifle and refrigerate it for at least 4 hours or preferably overnight. This resting period allows the flavors to meld beautifully.
  6. Garnish and Serve: Just before serving, optionally garnish the trifle with fresh mint leaves for a pop of color and added freshness.

Notes

  • You can substitute the berries with your favorite fruits or use frozen berries that have been thoroughly thawed and drained to avoid excess moisture.
