Description

This Beef Enchilada Skillet is a quick and flavorful one-pan meal packed with seasoned ground beef, black beans, corn, and a rich enchilada sauce, all topped with melted cheese. Ready in just 30 minutes, it’s perfect for a comforting weeknight dinner that brings Mexican-inspired flavors straight to your table.

Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Veggies & Sauce

  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 cup enchilada sauce

Topping

  • 1 cup shredded cheese

Instructions

  1. Brown the ground beef: In a large skillet over medium heat, cook the ground beef until it’s browned and no longer pink, breaking it apart as it cooks.
  2. Sauté onion and garlic: Add the chopped onion and minced garlic to the skillet. Cook until the onion softens and becomes translucent, about 3-4 minutes.
  3. Add beans, corn, tomatoes, and spices: Stir in the drained black beans, corn, diced tomatoes, enchilada sauce, cumin, chili powder, salt, and pepper. Mix everything well to combine.
  4. Simmer to blend flavors: Reduce heat and let the mixture simmer for 10 minutes, allowing all the flavors to meld together beautifully.
  5. Add cheese topping: Sprinkle the shredded cheese evenly over the skillet. Cover the skillet with a lid and cook until the cheese melts, about 2-3 minutes.

Notes

  • Use lean ground beef to reduce fat content.
  • For a spicier dish, add chopped jalapeños or extra chili powder.
  • Serve with warm tortillas, sour cream, or avocado slices for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • You can substitute ground turkey for a leaner protein option.
