Ingredients
Scale
Beef Mixture
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Veggies & Sauce
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 cup enchilada sauce
Topping
- 1 cup shredded cheese
Instructions
- Brown the ground beef: In a large skillet over medium heat, cook the ground beef until it’s browned and no longer pink, breaking it apart as it cooks.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the skillet. Cook until the onion softens and becomes translucent, about 3-4 minutes.
- Add beans, corn, tomatoes, and spices: Stir in the drained black beans, corn, diced tomatoes, enchilada sauce, cumin, chili powder, salt, and pepper. Mix everything well to combine.
- Simmer to blend flavors: Reduce heat and let the mixture simmer for 10 minutes, allowing all the flavors to meld together beautifully.
- Add cheese topping: Sprinkle the shredded cheese evenly over the skillet. Cover the skillet with a lid and cook until the cheese melts, about 2-3 minutes.
Notes
- Use lean ground beef to reduce fat content.
- For a spicier dish, add chopped jalapeños or extra chili powder.
- Serve with warm tortillas, sour cream, or avocado slices for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
- You can substitute ground turkey for a leaner protein option.
