Description

A comforting and hearty Beef & Tomato Macaroni Soup that is perfect for a cozy meal. This easy-to-make soup is loaded with ground beef, tomatoes, pasta, and flavorful seasonings.

  • 1 tablespoon olive oil
  • 1 lb ground beef

Aromatics:

  • 1 small onion, diced
  • 2 cloves garlic, minced

Base & Seasonings:

  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste

Additional:

  • 1 cup elbow macaroni, uncooked
  • 1 cup frozen mixed vegetables (optional)
  • Chopped parsley, for garnish

Instructions

  1. Brown the Beef: In a large pot, brown the ground beef in olive oil. Add onion and garlic.
  2. Add Ingredients: Stir in tomatoes, tomato sauce, broth, and seasonings. Simmer.
  3. Cook Pasta: Add macaroni and vegetables, simmer until pasta is cooked.
  4. Adjust & Serve: Adjust seasoning, garnish with parsley, and serve hot.
