Description

BBQ Brisket Melts are a deliciously hearty sandwich featuring tender shredded beef brisket coated in tangy barbecue sauce, melted cheddar and mozzarella cheeses, and caramelized red onions all toasted to perfection on buttery sourdough bread. This quick stovetop recipe is perfect for a comforting lunch or dinner with rich smoky flavors and gooey melted cheese.

Ingredients

Scale

Brisket and Sauce

  • 2 cups cooked beef brisket, shredded or sliced thin
  • 1 cup barbecue sauce
  • 1 tablespoon olive oil
  • 1 small red onion, thinly sliced

Sandwich Assembly

  • 4 slices sourdough or Texas toast-style bread
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter, softened

Instructions

  1. Sauté Onions: In a skillet over medium heat, warm the olive oil. Add the thinly sliced red onion and sauté for 5 to 6 minutes until the onions are soft and caramelized, stirring occasionally to prevent burning.
  2. Combine Brisket and Sauce: Add the shredded beef brisket and barbecue sauce to the skillet with the onions. Stir to coat the meat evenly with the sauce and cook for another 2 to 3 minutes until heated through. Remove the skillet from the heat once done.
  3. Prepare Bread: Butter one side of each slice of bread with the softened butter. This will help achieve a golden, crispy exterior when cooking.
  4. Assemble Sandwiches: Place two slices of bread, buttered side down, on a clean surface. Layer evenly with shredded cheddar cheese, the brisket and barbecue mixture, then shredded mozzarella cheese. Top with the remaining two slices of bread, buttered side facing up.
  5. Cook Sandwiches: Heat a clean skillet or griddle over medium heat. Place each assembled sandwich in the skillet and cook for 3 to 4 minutes on each side, pressing gently, until the bread is golden brown and the cheese inside is fully melted.
  6. Serve: Remove sandwiches from the skillet, slice in half if desired, and serve hot for maximum enjoyment.

Notes

  • Use leftover brisket or store-bought cooked brisket for quick and easy assembly.
  • Swap cheddar and mozzarella with provolone or pepper jack cheese to vary the flavor profile.
  • Serve the melted sandwiches with pickles or coleslaw to make a complete meal.
