Instructions
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until evenly combined.
- Mix Wet Ingredients: In another bowl, mash the ripe bananas thoroughly, then stir in the egg, milk, and vanilla extract until well incorporated.
- Combine Mixtures: Gradually add the dry ingredients to the wet banana mixture. Stir gently until just combined, avoiding overmixing to keep the fritters light.
- Heat Oil: Pour about 2 inches of vegetable oil into a deep skillet or saucepan and heat over medium heat until it reaches around 350°F (175°C). Use a thermometer if available for accuracy.
- Fry the Fritters: Carefully drop spoonfuls of batter into the hot oil, ensuring not to overcrowd the pan. Fry each fritter for 2–3 minutes on each side or until they turn golden brown and are cooked through.
- Drain and Serve: Use a slotted spoon to remove the fritters from the oil. Place them on paper towels to drain excess oil. Dust with powdered sugar if desired and serve warm for the best flavor and texture.

- For added flavor, consider adding a pinch of nutmeg or a splash of rum to the batter before frying.
