Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted

- 3 (8 oz) packages cream cheese, softened
- 1 cup mashed ripe bananas (about 2 medium bananas)
- 1 cup light brown sugar, packed
- 3 large eggs
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup chopped pecans or walnuts, divided
- 1/2 cup caramel sauce, plus more for drizzling

Instructions
- Prepare the Crust: Preheat oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter. Press into springform pan and bake for 10 minutes. Set aside to cool.
- Make the Filling: Beat cream cheese until smooth. Add bananas, brown sugar, eggs, sour cream, vanilla, cinnamon, salt, and half of the nuts. Pour over crust.
- Bake: Bake for 60–70 minutes until set. Cool in the oven, then refrigerate for at least 4 hours.
- Serve: Drizzle with caramel, sprinkle with nuts, and add whipped cream if desired.
Notes
- For added crunch, toast the nuts before adding.
- Use store-bought or homemade caramel sauce.
