Ingredients
Scale
Vegetables and Meat
- ½ small onion, diced
- ½ small green bell pepper, diced
- ½ small red bell pepper, diced
- 1 cup diced cooked ham
Dairy and Eggs
- 2 tablespoons butter
- 8 large eggs
- ¼ cup half-and-half (or whole milk)
- ¾ cup shredded cheddar cheese
Spices
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon coarse salt
- ¼ teaspoon pepper
Instructions
- Preheat and prepare baking dish: Preheat your oven to 375°F (190°C). Grease a 9×9-inch or similarly sized baking dish to prevent sticking.
- Sauté vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and both bell peppers, sautéing for 3-4 minutes until the vegetables are softened but still vibrant.
- Add ham to vegetables: Stir in the diced cooked ham and continue cooking for an additional 2-3 minutes to warm through. Remove skillet from heat and set aside.
- Mix egg base: In a medium bowl, whisk together the eggs, half-and-half (or milk), onion powder, garlic powder, salt, and pepper until fully combined and slightly frothy.
- Combine mixtures: Pour the cooked vegetable and ham mixture into the egg mixture and stir gently to evenly distribute all ingredients.
- Assemble in baking dish: Pour the combined mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
- Bake the omelet: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top turns a light golden brown.
- Cool and serve: Let the baked omelet cool for a few minutes before slicing into portions and serving warm.
Notes
- You can substitute half-and-half with whole milk for a lighter version.
- Feel free to add other vegetables like mushrooms or tomatoes for variety.
- Use a non-stick baking dish or grease the dish well to ensure easy serving.
- Leftovers can be refrigerated for up to 3 days and reheated gently in the microwave.
