Description

These Baked Broccoli Cheese Balls are a delicious and nutritious appetizer or snack that is perfect for parties or as a tasty treat. Packed with flavor from sharp cheddar cheese and Parmesan, these crispy balls are sure to be a hit with both kids and adults.

Ingredients

Scale

Broccoli Mixture:

  • 2 cups finely chopped cooked broccoli (steamed or blanched)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (plus more for coating)
  • 1/4 cup finely chopped green onion
  • 2 garlic cloves (minced)
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

For Baking:

  • olive oil spray

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the mixture: In a large bowl, combine the chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, green onion, garlic, eggs, salt, pepper, and red pepper flakes if using. Mix until fully combined.
  3. Form the balls: Scoop about 1 tablespoon of the mixture and roll into a ball. Repeat with remaining mixture. Roll each ball lightly in additional breadcrumbs for extra crispiness, if desired.
  4. Bake: Place the balls on the prepared baking sheet and lightly spray with olive oil. Bake for 20–25 minutes, or until golden brown and set, flipping once halfway through for even browning.
  5. Serve: Serve warm with your favorite dipping sauce.

Notes

  • These freeze well—just bake and cool, then freeze in a single layer.
  • Reheat in the oven or air fryer.
  • Swap cheddar for mozzarella or pepper jack for a different flavor twist.
