Description

Additional Ingredients:

  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)
  • 1/2 cup powdered sugar
  • 1–2 tablespoons milk (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and grease a mini muffin pan.
  2. Mix Dry Ingredients: In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt.
  3. Combine Wet Ingredients: In another bowl, mix milk, egg, vanilla extract, and melted butter.
  4. Mix Wet and Dry Ingredients: Pour wet ingredients into the dry mixture and stir until just combined.
  5. Add Blueberries: Gently fold in blueberries without overmixing.
  6. Bake: Spoon batter into muffin cups and bake for 12–15 minutes until golden.
  7. Make Glaze: Mix powdered sugar, milk, and vanilla extract for glaze.
  8. Glaze: Dip tops of fritter bites in glaze or drizzle over them. Let set before serving.
