Ingredients
Scale
Dry Ingredients
- 2½ cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
Wet Ingredients
- 2 ripe bananas
- 2 cups milk (dairy or non-dairy like almond or oat milk)
- 2 eggs
- ¾ cup pure maple syrup
- 2 teaspoons vanilla extract
Add-ins
- 1 cup chocolate chips
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish with melted butter or non-stick spray to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir until well mixed.
- Prepare Wet Mixture: In another bowl, mash the ripe bananas thoroughly until smooth. Add the milk, eggs, pure maple syrup, and vanilla extract, and mix well to combine all the wet ingredients.
- Combine Mixtures: Pour the wet mixture into the bowl with dry ingredients. Stir gently to combine, making sure the oats are fully coated. Then fold in the chocolate chips evenly throughout the batter.
- Transfer to Baking Dish: Pour and spread the mixture evenly into the prepared baking dish, smoothing the top to ensure even baking.
- Bake: Bake in the preheated oven for 50 to 60 minutes until the oatmeal is set. For a softer texture, aim closer to 50 minutes; for a firmer texture, bake up to 60 minutes.
- Rest Before Serving: Allow the baked oatmeal to rest for 5 to 10 minutes after removing from the oven. This helps it set further and makes it easier to slice and serve.
Notes
- You can substitute the chocolate chips with nuts, dried fruit, or seeds for variation.
- Leftovers can be stored in the refrigerator for up to 4 days and reheated in the microwave.
- Use gluten-free oats if you need this to be gluten-free.
- For a vegan version, replace eggs with flax eggs and use plant-based milk.
- Adjust the baking time according to your preferred texture, and check doneness by inserting a toothpick into the center; it should come out mostly clean.
