Instructions
- Prepare Oven & Dry Ingredients: Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper. In a large mixing bowl, whisk together the instant oats, whole wheat flour, baking powder, ground cinnamon, and salt until fully combined.
- Combine Wet Ingredients: In a separate bowl, thoroughly whisk the melted coconut oil or butter, the large egg at room temperature, vanilla extract, and agave syrup until the mixture is smooth and uniform.
- Mix Dough & Add Apples: Gradually pour the wet ingredients into the dry ingredients and stir gently until just combined. Carefully fold in the finely diced red apple to evenly distribute it throughout the cookie dough without overmixing.
- Scoop & Bake: Using rounded tablespoons or a 1.5-inch cookie scoop, drop dollops of dough onto your prepared baking sheets, spacing each cookie about 2 inches apart. Bake for 12 to 15 minutes, or until the edges appear golden brown and the centers are set but still soft.
