Ingredients
Scale
Filling
- 5 medium Granny Smith apples, peeled, cored, and finely diced (about 3 ½ cups)
- ¼ cup packed light brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon cornstarch
- 8 ounces cream cheese, softened (about 2 teaspoons per egg roll)
Other
- 22-24 egg roll wrappers
- Cooking oil or cooking spray
Topping and Dipping
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- ½ cup caramel topping, warmed (for dipping)
Instructions
- Preheat and Prep: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and prepare for baking.
- Prepare Filling: In a medium bowl, mix the diced apples, brown sugar, cinnamon, and cornstarch thoroughly. This mixture will provide the sweet and spiced filling inside the egg rolls.
- Assemble Egg Rolls: Lay out the egg roll wrappers on a clean surface. Spread about 2 teaspoons of softened cream cheese in the center of each wrapper, then top with approximately 2 tablespoons of the apple filling.
- Roll Egg Rolls: Lightly moisten the edges of each wrapper with water to help seal. Fold the bottom corner over the filling, then fold in the right and left corners toward the center, pressing edges to seal. Roll upwards to enclose the filling completely, sealing the edges with water to prevent leakage.
- Bake: Place the assembled egg rolls on the prepared baking sheet. Lightly brush or spray them with cooking oil to promote browning and crispiness. Bake in the preheated oven for 15-17 minutes, flipping halfway through, until they turn golden brown and crispy.
- Make Topping: While the egg rolls bake, combine granulated sugar and cinnamon in a shallow dish. This mixture will coat the baked egg rolls for added flavor and texture.
- Coat and Serve: Immediately after baking, roll the warm egg rolls in the cinnamon-sugar mixture to coat evenly. Serve warm with the warmed caramel sauce on the side for dipping.
Notes
- Make sure the apples are finely diced for even cooking and to prevent the egg rolls from bursting.
- You can substitute cream cheese with mascarpone for a slightly different flavor.
- Use cooking spray instead of oil brushing for a lighter version.
- The egg rolls are best enjoyed fresh and warm for maximum crispiness.
- Store leftovers refrigerated in an airtight container and reheat in the oven to retain crispiness.
