For the crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup sliced almonds, finely chopped
- 1/4 cup unsalted butter, melted
For the filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/3 cup sour cream
- 1/4 cup heavy cream
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 6 oz semisweet chocolate, melted and slightly cooled
For the topping (optional):
- 1/2 cup heavy cream
- 4 oz semisweet chocolate, chopped
- 2 tablespoons sliced almonds, toasted
Instructions
- Preheat oven and prepare crust: Preheat oven to 325°F (160°C). Mix crust ingredients and press into greased pan. Bake and cool.
- Prepare filling: Beat cream cheese, sugars, eggs, sour cream, heavy cream, extracts. Fold in melted chocolate.
- Bake and chill: Pour filling over crust, bake, cool in oven, then chill for at least 4 hours.
- Make topping: Heat cream, pour over chocolate, stir until smooth. Spread over chilled cheesecake, garnish with almonds.
