For the crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup sliced almonds, finely chopped
  • 1/4 cup unsalted butter, melted

For the filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/3 cup sour cream
  • 1/4 cup heavy cream
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 6 oz semisweet chocolate, melted and slightly cooled

For the topping (optional):

  • 1/2 cup heavy cream
  • 4 oz semisweet chocolate, chopped
  • 2 tablespoons sliced almonds, toasted

Instructions

  1. Preheat oven and prepare crust: Preheat oven to 325°F (160°C). Mix crust ingredients and press into greased pan. Bake and cool.
  2. Prepare filling: Beat cream cheese, sugars, eggs, sour cream, heavy cream, extracts. Fold in melted chocolate.
  3. Bake and chill: Pour filling over crust, bake, cool in oven, then chill for at least 4 hours.
  4. Make topping: Heat cream, pour over chocolate, stir until smooth. Spread over chilled cheesecake, garnish with almonds.
