- 1/4 teaspoon cinnamon
- 1 sweet potato, peeled and cubed
- 1 red bell pepper, chopped
- 1 (14.5-ounce) can diced tomatoes
- 1/2 cup natural peanut butter, creamy
- 3 cups chicken broth
- 2 cups chopped kale or spinach
- Chopped roasted peanuts and fresh cilantro for garnish
Instructions
- Prepare Chicken: Heat oil in a pot, season chicken with salt and pepper, then brown for 5–6 minutes. Set aside.
- Sauté Aromatics: In the same pot, sauté onion until softened. Add garlic, ginger, cumin, cayenne, paprika, and cinnamon; cook until fragrant.
- Add Ingredients: Stir in sweet potato, bell pepper, diced tomatoes, and chicken. Mix in peanut butter and chicken broth.
- Cook Stew: Simmer uncovered for 20–25 minutes until sweet potatoes are tender. Add kale/spinach and cook for 3–5 minutes.
